Want to Know What I Cooked?

In my last post, I wrote about having company over for the holidays and cooking several dinners for up to 6 people. Whenever I talk about cooking, people naturally want to know what I made, how it turned out and if I winged it or followed a recipe. So this post will answer those nagging questions!

On the first night, I made what an old roommate named”Kick Ass Soup” and a pretty salad. I have been making this soup for year and the original idea came from an old Moosewood Cookbook. It is a potato and spinach soup with a bit of cream cheese. I haven’t followed the actual recipe for years and it never comes out the same way twice! I like a bit of spice so I added pepper jack cheese and a touch of jalapeno pepper. I also always try to increase the vegetable count so added extra onions and a yellow pepper. No matter what I do to it, it always tastes amazing! You can’t go wrong with potatoes, spinach and cheese!

The next night I mostly followed this recipe to cook Paleo Chicken Marsala which interesting enough contained no marsala! I added more onions and mushrooms than the recipe called for and also threw in a bunch of spinach at the end to increase the veggie count! I served mashed potatoes as a side dish made with white potatoes, almond milk and butter.

The last night I made this Tandoori Fish with another pretty salad. I have never made anything Indian before so I followed the recipe closely and followed another one to make my own Tandoori Spice Mix. I will definitely be making Tandoori chicken and shrimp in the near future! I made another pretty salad and our guests made one too!

Not only did they make a salad but I must admit they gave me some serious competition!. I love to throw in a variety of vegetables as well as a little fruit and nuts to my salad. My guests took it another step further with vegetables I don’t typically use (tomatillos, English cucumbers) as well as tofu and a bit of jalapeno. Not only was their salad delicious, it might have been prettier than mine!

I purposefully made a big batch of the Tandoori Spice Mix and my favorite burger seasoning mix so I could give some away as holiday presents. That was as win, win!

I am writing this on January 1, 2020, the first day of our Whole30. I am looking forward to Paleo Swedish Meatballs served over mashed potatoes. This time I will make them with ghee instead of butter and almond milk to make them Whole30 compliant. Cooking makes me happy! Being healthy makes me feel amazing! Eating real food is one of the most important things you can do to improve your personal health puzzle. The Whole30 is helping me do that for the month of January!
